Food intake and food choice are regulated not only by nutrient and energy needs but also by taste and flavor preference.
With increased recognition that obesity is a consequence of overeating, improved understanding of how sensory signals integrate
with post-ingestive cues to regulate appetite is urgently needed. The overall aims of the symposium are firstly to summarize
both recent advances and shortfalls in our understanding of the importance of sensory factors in control of appetite, and
secondly to present data of flavors on subsequent food intake and food choice in healthy middle-aged women.
